Here’s What’s Cooking . . . Arctic Orange Pie

What with being squashed between all the holidays and rushed at work, I just KNOW that you’re on the lookout for a perfectly delightful, perfectly quick, perfectly easy pie recipe. Am I right, or am I right?

Well, I’ve got you covered. I came across this recipe in Taste of Home’s Most Requested Recipes (which is now on my I-must-have-or-I-die list), and was seriously impressed after making it with both its refreshing taste and refreshing simplicity (not to mention the fact that it has barely 200 calories a serving).

So do yourself a favor–whip up this little concoction, buy yourself some sparkling cider, and have yourself some early Christmas cheer.

Arctic Orange Pie 
1 package (8 oz) fat-free cream cheese
1/2 can (6 oz) orange juice concentrate
1 carton reduced-fat whipped topping
1 reduced-fat graham cracker crust (9 inches)
1 can mandarin oranges, drained

In a large mixing bowl, beat together the cream cheese and the orange juice concentrate. Fold in the whipped topping. Pour mixture into crust, and freeze until solid (about 4 hours). Defrost for about 5 minutes before cutting and serving. Garnish with mandarin oranges.
