Here’s What’s Cooking…Pork Chops With Apple Rings


I received an unexpected bounty of fresh-picked apples this week and have been wondering for the past couple days how I’m going to use them all while they’re still crisp. This recipe was the first to be tried (of many, I’m sure):

Pork Chops With Apples (from Taste of Home’s Prize Winning Recipes 2007)

6 pork chops (1/2 inch thick)
1/2 tsp celery salt
1/2 tsp rubbed sage (we substituted marjoram)
1/2 tsp salt
1/4 tsp pepper
2 tbs butter (we just used one and it tasted delicious still)
2 medium unpeeled Golden Delicious apples, cored and cut into 1/2-inch rings (we used a different variety–any cooking apple will do)
1/4 cup diced dried apricots
2 tbs. golden raisins
2 tbs. brown sugar

Sprinkle pork chops with celery salt, sage, salt and pepper. In a large skillet, brown chops in butter on one side; turn. Top with apple rings. Sprinkle with apricots, raisins, and brown sugar. Cover and cook on low for 18-22 minutes or until the meat juices run clear.

Yield: 6 servings
